Preserve-Flavored Demi

(makes approx. 8 oz.)

  • 1 tsp.  Butter
  • 1 tsp.  Chopped Shallots
  • 2 tbsp.  White or Red Wine
  • 3 tsp.  Preserves of Choice
  • 6 oz.  Bonewerks Culinarte Demi Glace de Veau or Poulet or Porc Classic
  • Salt and Pepper, to Taste
SAUTE shallots in butter in a saucepan. Stir in wine and preserves; reduce by 25%.
STIR in Bonewerks Culinarte Demi Glace de Veau or Poulet or Porc Classic. Season to taste with salt and pepper.
