Hershey Chocolate Chipotle Demi Glace

(makes approx 8 oz.)                                                                                                    

  • 1 tbsp. olive oil
  • 2 tbsp. diced shallots
  • 1/4 cup Shiraz Red Wine                                      
  • 1 tsp. Chipotle Peppers Chopped Fine
  • 1 tsp. chopped cilantro
  • 4oz. Bonewerks CulinArte Demi Glace de Veau Classic            
  • 2oz. Bonewerks CulinArte Demi Glace Elite
  • ¼ bar Hershey Chocolate
  • Salt and pepper, to taste

SAUTE Shallots in olive in saucepan until transparent, add Shiraz Red Wine reduce by 50%. Add in chipotle peppers. Simmer for one minute. 

STIR in Bonewerks CulinArte Demi Glace de Veau Classic and Demi Glace Elite. Add Hershey Chocolate; simmer for 1 minute. Season to taste with salt and pepper.
