Chilled Avocado Soup

(makes approx. ½ gallon)

  • 8 oz.  Bonewerks Culinarte Glace de Poulet
  • 2 tbsp.  Chopped Fresh Shallots
  • 1/2 tsp.  Chopped Garlic
  • 8  Large Avocados (peeled and pitted)
  • ¼ cup  Fresh Lime Juice
  • 2 cups  Heavy Whipping Cream
  • 3 cups  Water
  • 1/2 tsp.  Ground Cumin
  • 1/2 tsp.  Hot Sauce
  • Dash Cayenne Pepper
  • Salt, to Taste


  • Shredded chicken
  • Sour cream

PLACE Bonewerks Culinarte Glace de Poulet, shallots and garlic in a sauté pan. Bring to a gentle simmer for 3 to 4 minutes. Remove from heat; cool to room temperature. Transfer to a food processor.

ADD avocados, lime juice, whipping cream, water, cumin, hot sauce, cayenne and salt (to taste) to food processor with Glace mixture; blend until smooth.

GARNISH each serving with shredded chicken and a dollop of sour cream.
