Blue Cheese-Currant Sauce

(makes about 1/2 cup)

  • 1 tbsp.  Diced Green Onion
  • 1 tbsp.  Red Wine
  • 1 tbsp.  Red Currant Jelly
  • 1 1/4 tsp.  Chopped Garlic
  • 1/8 tsp.  Ground Black Pepper
  • Pinch Salt
  • 4 oz.  Bonewerks Culinarte Demi Glace de Poulet Classic or Demi Glace de Veau Classic
  • 1 tbsp. Blue Cheese Crumbles

SWEAT green onion, red wine, currant jelly, garlic, black pepper and salt in small saucepan.

STIR in Bonewerks Culinarte Demi Glace de Poulet until blended; simmer for 2 minutes. Stir in blue cheese crumbles to finish sauce.
