- 2 lbs. Pepper Crusted Bacon, Diced
- 3 lbs. Sweet Onions Julienned
- 1 Cup Honey
- 2 Sprigs of Fresh Thyme
- 1 Inch of Fresh Rosemary Sprig
In a large sautee pan, brown bacon. With slotted spoon, remove bacon and drain on paper towel. Remove half of the fat and save for another use.
Sautee onions in remaining fat until soft and caramelized. Add bacon, honey, and herbs.
Cook to a jam like consistency (it will thicken as it cools).
Serve two tablespoons of shredded beef short rib on the bottom of your favorite cocktail size roll and top with one tablespoon of the bacon onion jam, close up and serve!
